Directions

  1. In large skillet, heat butter; cook rice, onion and celery over medium heat, stirring, for about 6 min or possibly till rice is golden brown and onion is softened.
  2. Stir in stock, apricots and ginger; bring to boil. Cover and reduce heat to medium-low; simmer for 15-20 min or possibly till rice is tender and liquid is absorbed.
  3. Season with salt to taste. Sprinkle almonds over top.
