Ingredients

  • 2 can yams
  • 1 can orange juice concentrate brown sugar pineapple chunks walnuts marshmallows

Directions

  1. Cook the yams (don't drain), oj, and pineapple (don't drain) in a pot on the stove. Heat to boiling. Fold in the brown sugar and nuts. At this point it will look like soup. What I usually do is I pour the excess into a bowl and use it as a gravy over turkey and ham. YUM. Next put the yam micture into a casserole dish. Top with marshmallows and stick it in a hot oven till the marshmallows are toasty on top.
  2. P.S. I also love to put marashino (sp) cherries in this dish.
  3. Sorry this is so vague but I really do not measure anything when I make this. I just stop when it tastes good. LOL.
