Ingredients

  • 4 Large eggs
  • 3 c. sugar
  • 1 c. oil
  • 3 1/3 c. flour
  • 2 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 tbsp. vanilla
  • 2/3 c. water
  • 2 c. pumpkin
  • 1 c. raisins (optional)
  • 1 c. nuts (optional)

Directions

  1. Mix all ingredients together at one time. Grease and flour 2 (5 x 9) inch loaf pans. Divide batter equally into pans. Bake in preheated oven at 350 degrees for 1 hour. bread is ready when a toothpick inserted in the center of the bread comes out clean. Let cold 10 min. This serves 16 (1/2 inch) slices.
  2. For a festive look, grease and flour 3 (1 lb.) coffee cans and fill 2/3 full. Bake 1 hour at same temperature. This serves about 12 (1/2 inch slices.
