Ingredients

  • 1/4 c. shortening
  • 1/2 c. granulated sugar
  • 1/2 c. packed brown sugar
  • 2 Large eggs
  • 1 1/4 c. buttermilk
  • 2 1/2 c. flour
  • 3 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1 c. minced nuts

Directions

  1. Cream shortening, sugars, Large eggs and buttermilk. Sift together dry ingredients and stir into creamed mix. Stir in nuts. Grease and flour a 9 x 5 x 3 inch pan. Bake at 350 degrees for 60-65 min.
  2. Variations:
  3. Cherry Nut Bread: Reduce buttermilk to 1 c.. Add in 1/4 c. cherry juice, 1/2 c. minced cherries. Bake 70 min.
  4. Date Nut Bread: Eliminate buttermilk. Add in 2 c. minced dates in 1 1/2 c. boiling water.
  5. Pumpkin Nut Bread: Substitute 1 c. canned pumpkin and 2/3 c. whole lowfat milk for buttermilk. Add in 1 tsp. cinnamon.
  6. Cranberry Cheese Bread: Substitute 1 c. whole lowfat milk for buttermilk. Add in 1 c. fresh cranberries, 2 Tbsp. grated orange peel, 2 Tbsp. orange juice and 1 c. shredded Cheddar cheese.
