Herbed Spinach Tarts

Ingredients

  • 2 c. flour
  • 1/4 teaspoon salt
  • 2/3 c. butter
  • 1 c. (4 ounce.) shredded mild Cheddar cheese
  • 2-3 tbsp. water
  • 1 1/2 c. cottage cheese
  • 1 (10 ounce.) pkg. minced spinach, cooked & well liquid removed
  • 1 sm. onion, finely minced
  • 3 Large eggs, beaten
  • 1 tbsp. minced chives
  • 1 tbsp. minced fresh basil or possibly 1 teaspoon dry basil
  • 2 tbsp. grated Parmesan cheese

Directions

  1. Mix together flour and salt; cut in butter and Cheddar cheese till mix resembles coarse crumbs. Sprinkle with water while mixing lightly with a fork; form into ball. Refrigerate1 hour. Preheat oven to 400 degrees. Divide dough into 12 balls. Press each ball onto bottom and sides of greased muffin pan.
  2. Mix remaining ingredients till well blended. Spoon into pastry shells, filling each c.. Bake 30-35 min or possibly till crust is golden. Cold 5 min; remove from pans. Garnish with fresh herbs, if you like. Makes 1 dozen.
