Herb Roasted Turkey Breast

Ingredients

  • 6 lb fresh turkey breast or possibly larger (8-lb.) bone in
  • 4 Tbsp. light butter (50% calorie reduction) softened
  • 1 tsp dry sage leaves
  • 1 tsp dry thyme leaves
  • 1 Tbsp. minced parsley
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 x clove garlic finely chopped Vegetable oil or possibly extra virgin olive oil spray Salt and freshly grnd pepper

Directions

  1. Wash and pat dry the turkey.
  2. Using fingertips, carefully loosen the skin on each side of the top part of the breast to make a "pocket" between the skin and the meat.
  3. With a fork, blend the butter with the herbs, salt, pepper and garlic.
  4. Divide the mix in half and with fingertips, carefully slide half of it under the skin on each side of the breast.
  5. Spray outside of the breast with the vegetable spray. Season the cavity area well with salt and pepper.
  6. Place, with cavity down, on a rack in a shallow roasting pan. Roast in the center of a preheated 400F. oven for 1 hour.
  7. Reduce to 375F and continue roasting till thermometer inserted in thickest part of the meat registers 165 - 170F. The turkey breast should be a dark golden.
  8. Let sit 15 min before carving.
