Herb Mayonnaise And Herb Nage Recipe

Ingredients

  • 1 x Egg
  • 2 tsp Minced garlic
  • 1 Tbsp. Creole mustard Juice of one fresh lemon Salt to taste Freshly-grnd black pepper to taste
  • 1 c. Extra virgin olive oil
  • 2 tsp Minced tarragon
  • 2 tsp Minced parsley
  • 2 tsp Minced dill
  • 2 tsp Minced basil

Directions

  1. In a food processor, fitted with a metal blade, combine the egg, garlic, mustard, lemon and lemon juice. Process till smooth. Season with salt and pepper. With the machine running, slowly add in the oil in a steady stream, till an emulsion forms. Season with salt and pepper. Place the mayonnaise in a mixing bowl. Mix in the minced herbs. Cover and chill for 2 hrs before serving. Serve the mayonnaise as a dipping sauce for fried seafood or possibly a spread for sandwiches.
