%204%20weeks%20until%20my%20vacation!%20I%20am%20so%20excited%20that%204%20weeks%20from%20Monday%20I%20will%20be%20on%20a%20plane%20flying%20to%20Costa%20Rica%20to%20stay%20in%20Los%20Altos%20de%20Eros%20in%20Tamarindo.%20I%20am%20pretty%20sure%20these%20next%204%20weeks%20will%20go%20by%20pretty%20quickly%20because%20of%20how%20busy%20we%20are%20at%20school,%20so%20Costa%20Rica%20here%20we%20come%20(almost!).%3C/p%3E%3Cp%3EIn%20preparation%20for%20my%20vacation%20(and%20the%20yoga%20ashram%20that%20is%20at%20the%20resort)%20I%20wanted%20to%20branch%20out%20on%20my%20yoga%20DVDs.%20I%20still%20haven%E2%80%99t%20brought%20myself%20to%20go%20to%20an%20actual%20class,%20which%20I%20am%20sure%20sounds%20silly,%20but%20I%20am%20just%20not%20comfy%20enough%20yet.%20It%E2%80%99s%20a%20weird%20feeling%20because%20I%20usually%20love%20trying%20new%20classes%20in%20ANYTHING%20else,%20spin,%20kickboxing,cardio,%20weights,%20anything,%20but%20yoga%20I%20am%20just%20not%20comfortable%20with%20yet.%20It%20probably%20has%20something%20to%20do%20with%20the%20fact%20I%E2%80%99ve%20been%20exercising%20for%20years%20and%20only%20doing%20yoga%20for%20less%20than%20two%20months.%20I%20scanned%20through%20NetFlix%20and%20found%20Rodney%20Lee%E2%80%99s%20Power%20Yoga,%20so%20I%20currently%20have%20that%20to%20try.%20The%20Fitnessista%20recommended%20her%20and%20since%20she%20been%20known%20to%20do%20some%20good%20workouts,%20I%20went%20with%20that%20one%20first.%20I%E2%80%99ll%20let%20cha%20know%20how%20it%20is.%20Has%20anyone%20tried%20that%20or%20any%20other%20yoga%20DVD%20that%20I%20should%20check%20out???%3C/p%3E%3Cp%3EI%20wish%20I%20had%20great%20pictures%20of%20this%20bread,%20but%20now%20that%20I%E2%80%99m%20back%20at%20work,%20I%20have%20no%20great%20pictures.%20All%20of%20my%20pictures%20are%20taking%20with%20(gasp)%20a%20flash%20because%20it%E2%80%99s%20dark%20when%20I%20get%20home.%20I%20am%20greatly%20looking%20forward%20to%20daylight%20savings%20and%20the%20SPRING%20when%20I%20can%20take%20better%20pictures%20and%20maybe%20my%20husband%20will%20surprise%20me%20with%20a%20fancy%20new%20camera.%3C/p%3E%3Cp%3EThis%20recipe%20works%20with%20a%20bread%20machine%20%E2%80%93%20but%20I%20have%20NO%20clue%20how%20it%20translates%20to%20making%20bread%20without%20a%20bread%20machine.%20I%20have%20to%20say%20I%20know%20NOTHING%20about%20making%20bread%20by%20hand.%3C/p%3E%3Cp%3EHerb%20Focaccia%3C/p%3E%3Cp%3EIngredients%20(put%20in%20bread%20pan%20in%20order%20listed)%3C/p%3E%3Cp%3EPlace%20all%20ingredients%20in%20the%20order%20listed%20in%20the%20bread%20pan.%20Selet%20dough/pizza%20dough.%20When%20cycle%20is%20complete%20remove%20the%20dough%20from%20pan%20and%20punch%20to%20deflate%20and%20let%20it%20rest%20for%2010%20minutes.%20Spray%20a%20jelly%20roll%20pan%20with%20non-stick%20spray.%20After%20dough%20has%20rests,%20roll%20it%20out%20on%20a%20floured%20surface%20to%20about%2012%C3%978%20inches.%20Place%20it%20on%20the%20jelly%20roll%20pan.%20Cover%20it%20loosely%20with%20plastic%20wrap%20and%20let%20it%20rise%20for%20about%2050%20minutes.%20Preheat%20the%20oven%20to%20450%20degrees.%20With%20oiled%20fingertips%20press%20indentations%20in%20the%20dough%20about%201/2%20inch%20deep.%20Drizzle%20or%20spray%20bread%20with%20olive%20oil%20and%20sprinkle%20with%20sea%20salt.%20Put%20bread%20in%20oven%20and%20bake%20for%20about%2015-20%20minutes%20until%20golden%20and%20puffed.%3C/p%3E%3Cp%3EI%20ended%20up%20having%20panini%E2%80%99s%20for%202%20nights%20this%20week%20(and%20it%E2%80%99s%20not%20over%20yet!)%20This%20was%20last%20night%E2%80%99s%20dinner,%20paninis%20round%20two.%20Last%20night%20I%20had%204%20egg%20whites,%20spinach,%20and%20goat%20cheese%20on%20the%20focaccia%20bread%20with%20a%20side%20of%20the%20leftover%20vege%E2%80%99s%20from%20night%201%20with%20chickpeas%20and%20a%20small%20piece%20of%20ricotta%20salata.%20Yum.%20This%20bread%20is%20definitely%20worth%20it,%20carbs%20or%20no%20carbs%20I%20loved%20every%20bite%20and%20isn%E2%80%99t%20that%20what%20it%E2%80%99s%20all%20about?%3C/p%3E%3Cp%3ESo%20any%20good%20yoga%20dvd%E2%80%99s%20that%20anyone%20can%20recommend?%20Or%20what%20about%20any%20books%20on%20health%20or%20food?%20I%E2%80%99m%20looking%20for%20a%20new%20good%20read!%3C/p%3E%3Cp%3Ebread,%3C/p%3E%3Cp%3Ewhole%20grains%3C/p%3E){kind=link}
