Ingredients

  • 1/3 c. butter, softened
  • 2 tbsp. chopped fresh parsley
  • 1/2 teaspoon dry whole tarragon
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 sm. zucchini
  • 1/4 c. water
  • 2 tbsp. freshly grated Parmesan cheese
  • 1 tbsp. soft bread crumbs

Directions

  1. Combine first 5 ingredients and set aside.
  2. Cut each zucchini into lengthwise slices, leaving slices attached on stem end. Fan slices out, and spread proportionately with butter mix. Place in a 15x10x1 inch jelly roll pan; add in water. Bake at 400 degrees for 20 min or possibly till crisp tender.
  3. Combine cheese and bread crumbs; sprinkle on zucchini and broil 4 inches from heat 2 min or possibly till cheese melts. Yield: 4 servings.
