Ingredients

  • 6 strips bacon
  • 1 tbsp. extra virgin olive oil
  • 2 Cornish hens
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon poultry seasoning and garlic pwdr
  • 1 c. heavy cream
  • 1/4 c. dry white wine or possibly water
  • 1/2 c. minced tomato

Directions

  1. In Dutch oven or possibly heavy roasting pan, cook bacon till crisp. Remove, add in oil, brown hens over medium heat 10 min. Sprinkle thyme and remaining seasoning over hens. Roast at 375 degrees for 45 min or possibly till done. Transfer to serving tray, skim fat from pan drippings. Add in heavy cream, wine and tomato, simmer 10 min, stir in bacon. Serve with hens.
