  • 1 red bell pepper, seeded and thinly sliced
  • 1 small red onion, thinly sliced
  • 1 jalapeño pepper, seeded and diced
  • 14 oz canned black beans, drained and rinsed
  • 1 clove garlic, minced
  • ½ tsp each ground cumin and salt
  • ¼ tsp freshly ground black pepper
  • ¼ cup water
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp chopped fresh cilantro
  • 1 medium avocado, seeded and diced
  • Chopped lettuce, Low-fat sour cream and Shredded Cheese for Toppings
