  • 2 lg. onions, finely minced
  • 1 c. water
  • 4 potatoes, peeled & minced
  • 1/2 teaspoon pepper
  • 16 ounce. frzn corn or possibly 1 (16 ounce.) can low sodium corn, liquid removed
  • 2 c. skim lowfat milk
  • 1 green pepper, minced


  1. Saute/fry onion and green pepper in teflon pan or possibly in a little oil. Add in water, potatoes, pepper to onion and green pepper. Cook till potatoes are tender, about 15 min. Mash potatoes slightly. Add in corn and lowfat milk. Heat till simmering. Yield: 4 servings.
  2. Recipe may be doubled except for pepper. Also freezes well. VARIATION: May add in 1/8 lb. low sodium, low-fat ham cut into bite- size pcs and 1 can of any prepared dry beans (rinsed and liquid removed to remove excess sodium).
