%20%20was%20diagnosed%20with%20kidney%20cancer,%20we%20all%20rallied%20around.%20%20My%20family%20seems%20to%20be%20made%20up%20of%20cancer%20survivors,%20so%20we%20were%20not%20fearful%20with%20his%20prognosis.%20%20(My%20grandmother%20survived%20one%20form%20of%20cancer%20or%20another%20since%20she%20was%20in%20her%20twenties%E2%80%94she%20lived%20to%20her%20late-80s%E2%80%94and%20my%20mother%20is%20a%20breast%20cancer%20survivor.%20%20My%20great%20uncle%20survived%20cancer%20and%20is%20still%20going%20strong%20at%2093.%20%20I,%20myself,%20%20have%20survived%20the%20big%20%E2%80%9CC.%E2%80%9D%20)%20%20So,%20we%20were%20supportive%20and%20cheerful%20and%20hopeful.%3C/p%3E%3Cp%3EIt%20became%20harder%20and%20harder%20to%20maintain%20this%20cheerfulness%20as%20his%20cancer%20spread%20and%20he%20went%20into%20surgeries%20and%20experimental%20treatments.%20%20Hope%20soon%20was%20futile.%3C/p%3E%3Cp%3EOn%20one%20of%20our%20last%20visits%20to%20his%20home,%20I%20told%20him%20I%20would%20make%20and%20bring%20lunch%20to%20him.%20%20I%20wanted%20to%20make%20something%20hearty,%20yet%20something%20he%20would%20be%20able%20to%20enjoy%20eating.%20%20As%20recently%20written,%20he%20was%20a%20big%20eater.%20%20His%20only%20request%20to%20me%20(which%20was%20repeated%20several%20times%20in%20our%20phone%20conversation)%20was%20to%20not%20make%20anything%20spicy.%3C/p%3E%3Cp%3EI%20had%20a%20ham%20and%20bean%20vegetable%20soup%20that%20I%20had%20made%20before%20that%20I%20hoped%20would%20work%20for%20him.%20%20I%20modded%20it%20a%20bit%20so%20it%20would%20not%20be%20too%20spicy.%20%20(I%20hoped%20he%20would%20be%20able%20to%20eat%20it%E2%80%94I%20stressed%20a%20great%20deal%20about%20what%20to%20make.)%3C/p%3E%3Cp%3EHearty%20Bean%20Soup%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20the%20bottom%20of%20a%20large%20Dutch%20oven%20or%20soup%20pot.%20%20Saute%20onions,%20celery%20and%20carrots%20until%20soft.%20%20Add%20stock%20and%20stir%20to%20get%20any%20brown%20bits%20from%20the%20saute%20up%20from%20the%20bottom%20of%20the%20pan.%20%20Add%20water%20and%20tomatoes.%20%20Add%20potato,%20beans,%20brown%20sugar%20and%20bay%20leaf.%20%20Season%20with%20salt%20and%20pepper.%20%20Simmer%20for%2045%20minutes.%20%20%20Stir%20in%20fresh%20basil%20before%20serving.%3C/p%3E%3Cp%3EIf%20I%20had%20not%20been%20cooking%20specifically%20for%20him,%20I%20would%20have%20added%20wine%20(whatever%20I%20had%20on%20hand)%20instead%20of%20the%20water.%20%20I%20would%20also%20have%20added%20some%20red%20pepper%20flakes%20and%20maybe%20a%20bit%20of%20rosemary.%20%20But,%20this%20meal%20was%20all%20about%20him.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20remember%20if%20he%20ate%20very%20much%20at%20all.%20%20I%20do%20remember%20that%20we%20came%20to%20the%20realization%20that%20this%20time,%20our%20family%20would%20not%20be%20able%20to%20beat%20cancer,%20no%20matter%20how%20much%20we%20prayed,%20or%20how%20many%20experimental%20treatments%20or%20natural%20remedies%20were%20tried.%3C/p%3E%3Cp%3EI%20saw%20my%20uncle%20one%20more%20time%20after%20this%20visit.%20%20This%20time%20he%20was%20in%20the%20hospital.%20%20%20I%20hate%20to%20remember%20him%20there.%3C/p%3E%3Cp%3EInstead,%20I%20choose%20to%20remember%20him%20in%20the%20kitchen,%20stirring%20up%20a%20huge%20pot%20of%20some%20sort%20of%20highly%20edible%20concoction,%20planting%20and%20hoping%20for%20bushels%20of%20produce%20in%20his%20city%20garden,%20or%20later%20at%20his%20ranch,%20among%20his%20cattle%20and%20horses.%20%20I%20find%20comfort%20in%20these%20memories%20every%20time%20I%20make%20this%20recipe.%3C/p%3E%3Cp%3ECannellini%20Bean%3C/p%3E){kind=link}
