Ingredients

  • 1 lb boneless skinless chicken breast cut 1" strips
  • 3 Tbsp. lime juice
  • 1/2 tsp chili pwdr
  • 1/2 tsp grnd coriander
  • 1 x onion quartered
  • 1 x green pepper sliced into strips
  • 8 x flour tortillas - (6" dia) Chunky salsa

Directions

  1. Combine lime juice, chili pwdr and coriander and pour over chicken breast. Chill for 30 min. Add in vegetables to chicken and toss well.
  2. Coat a pan with non-stick cooking spray. Add in chicken and vegetables and stir-fry till done.
  3. Hot tortillas in microwave for 20 seconds. Fill with chicken mix. Serve hot with salsa.
  4. This recipe yields 4 servings.
