Healthy Sweet and Sour Chicken Recipe

Modified recipe I found when looking for clean eating recipes. It was very basic. I added the green pepper, onion, pineapple and cherries. We have had it for dinner twice and cooked it for friends this week who gave it rave reviews.

Ingredients

  • ½ cup wheat free tamari
  • ½ cup apple cider vinegar
  • ¼ cup coconut nectar
  • 2 large garlic cloves, peeled and minced
  • A knob of fresh ginger (roughly 1½ inches), peeled and minced or 1 teaspoon ginger powder
  • 1 lb chicken breasts, sliced into long strips about 3” long and ½” thick
  • 1 cup sweet onion cut in large pieces
  • 1 medium green pepper cut into large pieces
  • 3/4 cup diced fresh pineapple
  • 1/3 cup chopped fresh cherries pitted

Directions

  1. In a large skillet mix the tamari, vinegar, coconut nectar, garlic and ginger. Heat over low heat stirring occasionally until sauce thickens about 12 mins.
  2. Add the chicken pieces in the sauce and cook stirring frequently until cooked through, about 12-15 mins.
  3. Add the onion and green pepper to the mixture when chicken is half cooked. Once the chicken is done add the pineapple and cherries just to warm.
  4. Serve over brown rice.
