Ingredients
- 1/3 c. each rolled oats, cornmeal & all purpose flour
- 1 teaspoon baking pwdr
- 2 lg. separated Large eggs
- 1/2 teaspoon baking soda
- 1 c. buttermilk
- 2 tbsp. sugar
- 1/4 teaspoon salt to taste
- Salad oil
- Whipped Large eggs
Directions
- In a bowl combine oats, cornmeal, flour, sugar, baking pwdr, baking soda and salt. In another bowl whisk egg yolks and buttermilk to blend. Pour liquid into dry ingredients, stir just to moisten proportionately. With electric mixer, beat egg whites on high speed till soft peaks form. Gently mix in batter. Heat on electric griddle, 375 degrees. Brush griddle lightly with oil, spoon about 1/3 c. of batter per pancake onto griddle till pancake is set and bottom is medium brown, about 1 minute. Makes about 8 pancakes.
