Healthy Fried Rice Recipe

Ingredients

  • Keywords: stir-fry entree vegetarian
  • 1 tbsp vegetable oil
  • 2 cloves garlic, finely diced
  • 4 green onions, finely diced
  • 1 tbsp peeled and diced ginger
  • 4 cups cooked brown rice
  • 3/4 cup diced red, yellow or orange peppers
  • 2 cups edamame, cooked
  • 1 cup frozen corn
  • 1 cup julienne carrots
  • 1 package cubed tofu
  • 2 larges eggs, beaten
  • 3 tbsp soy sauce
  • Heat oil in a large skillet, add garlic, ginger and scallions and cook for 1-2 minutes
  • Add in rice, peppers, edamame, corn, tofu, and carrots and cook until heated through, around 5 minutes
