Ingredients

  • 1 x block tofu, crumbled by hand to create small pcs
  • 2 c. brown rice, cooked
  • 1 x red onion, diced
  • 2 x carrots, minced
  • 2 x ribs leafy celery, minced
  • 1 sm green pepper, minced
  • 6 slc whole wheat bread, crumbled and toasted into bread crumbs
  • 1 c. tamari soy sauce
  • 1 c. minced peanuts Or possibly sunflower seeds, toasted
  • 1/2 tsp savory
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1/4 tsp cumin
  • 1/4 tsp rosemary
  • 1 tsp paprika
  • 1/4 bn parsley, chopped
  • 3/4 c. tomato puree
  • 1 tsp cider vinegar Or possibly brown rice vinegar

Directions

  1. Mix tofu, rice, and vegetables together. Add in bread crumbs and rest of ingredients, except puree and vinegar, mixing well. If mix is too dry, add in a quarter- to half-c. water. "Meatloaf" should be hard, and not too liquidy.
  2. Lightly oil bread loaf pan or possibly 4 by 4 square pan with safflower oil and place
  3. "meatloaf" in it. Mix puree and vinegar together and drizzle on top. Bake at 350 degrees for 1 hour, preferably on top shelf of oven.
