Healthy Chunky Peanut Butter Cups

Healthy and delicious peanut butter cups made with crunchy peanuts mixed with peanut butter and wrapped in deep dark chocolate.
This is a cleaned up version of a traditional peanut butter cups. Once you have a taste of these, you will never want the packaged version again. They contain only six wholesome ingredients: natural peanut butter, peanuts, coconut flour, maple syrup, organic cacao powder, coconut oil, compare that to the packaged peanut butter cups that have a long and scary ingredient list.
The chocolate is made by mixing the cacao powder with melted coconut oil and maple syrup. Half of the mixture is poured into molds – these silicone baking cups work quite well. The chocolate is placed in the freezer for 10 minutes while the peanut butter ingredients are mixed together.
After the chocolate solidifies, a generous teaspoonful of peanut butter mixture is placed on top and gently pressed to cover the chocolate.
The remainder of the chocolate is used to top them off, and they are placed in the freezer for 10 minutes more. Remove them from molds and store peanut butter cups in the refrigerator to prevent the chocolate from melting.

- FOR THE CHOCOLATE ¾ cuporganic unrefined coconut oil
- ¾ cup organic cacao powder 3 tablespoonsmaple syrup

heat the coconut oil in a saucepan over medium heat once coconut oil liquefies add the cacao powder and mix well turn heat off and stir in the syrup and peanut butter place a tablespoon of chocolate into muffin cups and freeze for 10 minutes meanwhile make the peanut butter mixture by combining the peanut butter with the syrup, coconut oil and peanuts remove chocolate from freezer and shape a teaspoonful of the peanut butter mixture into disks and gently press on top of the frozen chocolate stir the chocolate mixture and pour a teaspoon over each baking cup and return to freezer Store cups in refrigerator or freezer 3.5.3208
