Ingredients
- 100 gm butter
- 100 gm white chocolate
- 1 c. hazelnuts, grnd
- 6 x egg whites, lightly beaten
- 2 tsp vanilla essence
- 1 1/2 c. icing sugar
- 1/2 c. flour
- 1 c. kiwifruit For the Kiwifruit Verjuice Coulis
- 4 x golden brown kiwifruit
- 50 ml verjuice
- 30 gm icing sugar
Directions
- Preheat oven to 180 C, Grease 10 individual cake or possibly muffin tins. Heat the white chocolate and butter together in the microwave for 1-2 min. Stir till smooth then mix with the remaining ingredients till just combined. Spoon mix into prepared tins, fill to 3/4's full. bake for 25 min then allow to stand a few min before turning out onto a cooling rack.
- For the Kiwifruit Verjuice Coulis:To make golden brown kiwifruit and verjuice coulis. Puree all ingredients together. Serve the friands with fresh kiwifruit, kiwifruit coulis and some mascarpone.
