Ingredients

1 c. shortening
1 1/4 c. sugar
1 teaspoon salt
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 tbsp. lemon juice
2 Large eggs, beaten
2 1/4 c. flour
1 1/3 c. shredded coconut

Directions

Combine shortening, sugar, salt, rinds and juice, and Large eggs; beat thoroughly. Add in flour; mix well. Add in coconut; blend together.
Drop rounded teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 10-12 min.
