Hawaiian Chicken

This recipe is the easiest thing that I have ever cooked, and an all-time favorite in the family. I got this from my mother-in-law and could not believe how easy, and how good it is. You can slim it down a bit with lighter dressing and chicken breasts, which are really good as well. Also great as a make-ahead freezer meal (mix sauce and freeze in bag, separate from chicken - thaw, then cook as directed).

Serve over steamed brown or white rice with a side of steamed broccoli. Yummy!

Goes Well With: Rice and fresh steamed vegetables, a crisp green salad

Ingredients

  • 8-10 chicken thighs and drumsticks
  • 16 oz. Russian or Catalina Salad Dressing
  • 1 Envelope Dry Onion Soup Mix
  • 10 oz. Apricot Preserves
  • 8 oz. Crushed Pineapple, drained

Directions

  1. Preheat over to 350 degrees.
  2. Place chicken pieces in glass casserole dish.
  3. Mix all other ingredients together in large bowl. Pour over chicken pieces.
  4. Bake for 45-1 hour until sauce is thick and bubbly, and chicken is cooked through.
