  • For the Pomegranate Dressing: 3/4 cup greek yogurt (makes 1 1/2 cups)
  • 1/4 cup avocado oil
  • 2 tbsp. agave nectar (or honey)
  • 1/4 pomegranate juice
  • 1 1/2 tsp. aged apple balsamic vinegar
  • 1 tsp. pomegranate balsamic vinegar
  • Pinch of salt
  • For the Salad: Salad greens (your choice) I used Kale Mix Blend
  • Slices of fresh apples (your choice of variety) I used Honey Crisp
  • Dried cranberries
  • Fresh pomegranate seeds
  • Dried pumpkin seeds

Directions

  1. For make the Pomegranate Dressing: Add ingredients to a bowl and whisk until smooth and combined
  2. Alternatively you can add all the ingredients to a mason jar, seal and shake until well combined
  3. To arrange the salad:Place some greens on a serving plate
  4. Sprinkle with about a tbsp. each of cranberries, pumpkin seeds and pomegranate seeds
  5. Drizzle with salad dressing
  6. On the side of the plate, spread some salad dressing, and along side add the slices of fresh apple
  7. ENJOY!!
