Harvest Salad with Creamy Pomegranate Yogurt Dressing combines the colours and flavours of fall. Perfect starter for holiday meals, or add some turkey and make a complete meal.
Ingredients
- For the Pomegranate Dressing: 3/4 cup greek yogurt (makes 1 1/2 cups)
- 1/4 cup avocado oil
- 2 tbsp. agave nectar (or honey)
- 1/4 pomegranate juice
- 1 1/2 tsp. aged apple balsamic vinegar
- 1 tsp. pomegranate balsamic vinegar
- Pinch of salt
- For the Salad: Salad greens (your choice) I used Kale Mix Blend
- Slices of fresh apples (your choice of variety) I used Honey Crisp
- Dried cranberries
- Fresh pomegranate seeds
- Dried pumpkin seeds
Directions
- For make the Pomegranate Dressing: Add ingredients to a bowl and whisk until smooth and combined
- Alternatively you can add all the ingredients to a mason jar, seal and shake until well combined
- To arrange the salad:Place some greens on a serving plate
- Sprinkle with about a tbsp. each of cranberries, pumpkin seeds and pomegranate seeds
- Drizzle with salad dressing
- On the side of the plate, spread some salad dressing, and along side add the slices of fresh apple
- ENJOY!!
