Ingredients
- 1/4 c. butter
- 1 c. sugar
- 1 c. canned pumpkin
- 2 Large eggs
- 2 1/4 c. unsifted flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 3/4 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 c. lowfat milk
- 1 sm. pkg. semi-sweet chocolate chips
- 1/2 c. minced pecans
Directions
- Cream butter and sugar in large mixer bowl till light and fluffy. Add in pumpkin and Large eggs; blend on low speed of mixer. Combine flour, baking pwdr, baking soda, pumpkin pie spice and salt. Add in alternately with lowfat milk to pumpkin mix. Beat till well blended; stir in chips and pecans. Spread batter into 3 well greased mini loaf pans or possibly spoon into paper lined muffin c. 2 3/4" in diameter, 2/3 full. Bake at 350 degrees for 40 to 45 min for mini loaves or possibly 20 to 25 min for muffins.
