Harvest Grape Cake Recipe

Ingredients

  • 3 x Large eggs
  • 1 c. Sugar
  • 5 Tbsp. Sweet butter melted
  • 5 Tbsp. Extra-virgin extra virgin olive oil
  • 1/2 c. Lowfat milk
  • 2 c. Flour Zest of 1 orange
  • 2 Tbsp. Amaretto
  • 1 tsp Baking pwdr
  • 2 1/2 c. Small wine grapes stemmed, rinsed (Pinot Noir or possibly Cabernet grapes)

Directions

  1. Butter and flour a ten-inch cake pan. Preheat oven to 375 degrees.
  2. In a mixing bowl, beat Large eggs and sugar to thick golden brown ribbons, 2 to 3 min. Add in butter, extra virgin olive oil and lowfat milk. Add in flour, orange zest, Amaretto and baking pwdr and stir together (don't overmix). Stir in the 2 c. of the grapes, breaking a third of them with forceful strokes, leaving most whole. Pour batter into prepared pan, place in oven and cook 40 to 50 min, till pierced toothpick exits clean. Cold, carefully turn out right side up, sprinkle with powdered sugar and serve with the remaining grapes.
