Ingredients
- 1 cup Guinness beer
- 1 cup unsalted butter-room temperature
- 3/4 cup unsweetened cocoa powder
- 2 cups flour
- 2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 2 large eggs-room temperature
- 2/3 cup sour cream
- Ganache filling:
- 6 ounces bittersweet chocolate-roughly chopped
- 2/3 cup heavy cream
- 2 tablespoons butter-room temperature
- Bailey's Frosting:
- 3 1/2 cups powdered sugar
- 1/2 cup butter-at room temperature
- 3 to 4 tablespoons Bailey's
- 2 drops green food coloring

,%20St.%20Patrick%E2%80%99s%20Day%20has%20always%20been%20one%20of%20those%20fun,%20dress-up-like-a-lepruchen%20days!%20I%20use%20to%20love%20elementary%20school%20when%20I%20would%20walk%20in%20my%20classroom%20and%20there%20would%20be%20Lepruchen%20dust%20scattered%20about%20and%20a%20little%20pot%20of%20gold%20with%20rolos%20on%20the%20teacher%E2%80%99s%20desk.%3C/p%3E%3Cp%3EWhat%20ever%20happened%20to%20the%20good%20%E2%80%98ol%20days??%20I%20guess%20the%20mystique%20of%20pots%20of%20gold%20and%20fairy%20dust%20just%20aren%E2%80%99t%20the%20same%20as%20one%20gets%20older.%20Now%20seeing%20the%20fairy%20dust%20on%20my%20desk%20would%20make%20me%20get%20all%20OCD%20about%20cleaning%20it%20up.%20Now%20we%20make%20%E2%80%9CBucket%20Lists%E2%80%9D%20of%20things%20we%20want%20to%20do%20before%20kicking%20the%20bucket.%20I%20still%20haven%E2%80%99t%20decided%20if%20I%20like%20the%20Bucket%20List%20idea%20or%20not,%20however%20I%20do%20have%20one%20started%20and%20one%20of%20the%20things%20on%20it%20is%20to%20see%20the%20river%20dyed%20green%20for%20St.%20Patrick%E2%80%99s%20day%20in%20Chicago.%3C/p%3E%3Cp%3EI%20will%20be%20in%20Chicago%20this%20year%20on%20St.%20Patty%E2%80%99s%20Day,%20however%20I%20probably%20won%E2%80%99t%20be%20able%20to%20make%20it%20to%20the%20river,%20unfortunately!%20You%20see,%20I%20would%20love%20to%20see%20it%20green,%20but%20I.%20Can%E2%80%99t.%20Stand.%20Parades!%20It%E2%80%99s%20probably%20clowns%20that%20I%20really%20fear,%20but%20something%20about%20being%20shorter%20and%20having%20everyone%E2%80%99s%20armpits%20in%20my%20face%20has%20always%20grossed%20me%20out!%20So%20unless%20I%20can%20get%20Hubby%20to%20splurge%20on%20a%20helicopter%20ride,%20I%E2%80%99ll%20be%20watching%20it%20on%20TV%20once%20again.%20If%20by%20chance,%20I%20do%20make%20it%20to%20the%20river,%20I%20will%20post%20photos!%3C/p%3E%3Cp%3EAny%20way%20you%20celebrate%20the%20Holiday,%20have%20a%20great%20time%E2%80%93because%20it%E2%80%99s%20really%20about%20the%20green%20beer%20anyway,%20and%20these%20AWESOME%20cupcakes%E2%80%A6%3C/p%3E%3Cp%3EGuinness%20Cupcakes%20w/%20Bailey's%20Frosting%3C/p%3E%3Cp%3EYield:%2024%20cupcakes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ECupcakes:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFor%20the%20cupcakes:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%20Line%2024%20cupcake%20cups%20with%20paper%20liners.%20Bring%20the%20beer%20and%201%20cup%20butter%20to%20simmer%20in%20a%20heavy%20saucepan%20over%20medium%20heat.%20Add%20the%20cocoa%20powder%20and%20whisk%20until%20smooth.%20Set%20aside%20and%20cool%20slightly.%3C/p%3E%3Cp%3EIn%20a%20stand%20mixer,%20beat%20the%20eggs%20and%20sour%20cream%20to%20blend.%20Add%20the%20beer/chocolate%20mixture%20and%20beat%20until%20combined.%20Add%20the%20flour,%20sugar,%20baking%20soda%20and%20salt%20mix%20in%20briefly%20on%20slow.%20Fold%20by%20hand%20to%20completely%20mix%20together.%20Using%20an%20ice%20cream%20scoop,%20fill%20the%20cupcake%20liners%20about%202/3%20of%20the%20way%20full.%20Bake%20for%20about%2015%20minutes%20or%20until%20a%20toothpick%20comes%20out%20clean.%20Cool%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EFor%20the%20filling:%3C/p%3E%3Cp%3EPut%20the%20chocolate%20into%20a%20mixing%20bowl.%20Simmer%20the%20cream,%20then%20pour%20it%20over%20the%20chocolate.%20Let%20it%20sit%20for%20about%20a%20minute,%20then%20mix%20it%20up.%20If%20the%20chocolate%20isn't%20totally%20melted,%20microwave%20for%20about%2020%20seconds%20then%20stir%20again.%20Add%20in%20the%20butter%20and%20stir%20until%20melted.%20Set%20aside.%3C/p%3E%3Cp%3EDig%20out%20a%20small%20hole%20in%20the%20middle%20of%20each%20cooled%20cupcake,%20not%20going%20all%20the%20way%20down%20to%20the%20bottom.%20Put%20the%20ganache%20filling%20into%20a%20zip-loc%20bag%20and%20clip%20the%20corner%20off%20of%20the%20bag.%20Fill%20the%20cupcake%20holes%20to%20the%20top%20with%20the%20ganache.%3C/p%3E%3Cp%3EFor%20the%20frosting:%3C/p%3E%3Cp%3EWhip%20the%20butter%20in%20a%20stand%20mixer%20until%20light%20and%20fluffy.%20Slowly%20add%20in%20the%20powdered%20sugar,%20mixing%20between%20each%20addition.%20Add%20in%202%20drops%20of%20green%20food%20coloring%20and%20the%20Bailey's%20and%20continue%20mixing%20until%20it%20is%20fully%20combined%20and%20a%20good%20consistency.%20Put%20the%20frosting%20in%20a%20large%20zip-loc,%20cut%20off%20the%20bottom%20corner%20of%20the%20bag%20and%20frost%20the%20top%20of%20the%20cupcakes.%3C/p%3E%3Cp%3EAdapted%20from%20Smells%20Like%20Home%3C/p%3E){kind=link}
