Ingredients

  • 1 lb Grnd beef
  • 1/4 lb Pork sausage
  • 1/4 c. Minced onion
  • 1 x Clove garlic, finely minced
  • 20 x Pitted ripe black olives, (up to 24)
  • 1 can (16-ounce.) whole tomatoes
  • 1 can (16-ounce.) whole corn, liquid removed
  • 1 1/2 tsp Salt
  • 1 c. Lowfat milk
  • 2 tsp Chili pwdr
  • 1 c. Cornmeal
  • 2 x Large eggs, well-beaten
  • 1 c. Cheddar cheese, shredded

Directions

  1. Cook grnd beef, pork sausage, onion and garlic till meat is nicely browned; drain if necessary. Stir in tomatoes with juice, liquid removed corn, olives, chili pwdr and salt. Heat to boiling. Pour till an ungreased 9x9x2" baking dish. Mix cornmeal, lowfat milk and Large eggs; pour over the meat mix. Sprinkle with Cheddar cheese. Bake at 350 degrees for 40-50 min or possibly till golden.
