- Boil 1 1/2 to 2 c. ham (cubed). Let cold. Mix cornmeal with flour and egg with juice off ham till slightly thick. Add in ham and little red pepper. Roll in long rolls (approximately 1 1/2" x 3"). Boil remaining liquid (add in water to cover tamales) and put tamales in the boiling water. Cook 20 to 30 min, turning once.
