  • 1 tbsp. salad oil
  • 1 (24 ounce.) bag frzn O'Brien potatoes
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tbsp. all-purpose flour
  • 2 tbsp. prepared mustard
  • 1 1/2 c. skimmed or possibly reliquified non-fat dry lowfat milk
  • 1 1/2 lbs. leftover cooked smoked ham cut into 1/2" pcs

Directions

  1. About 20 min before serving: In a 12" cook and serve skillet over medium high heat, in warm salad oil, cook frzn potatoes with salt and pepper till lightly browned, about 7 min, stirring occasionally.
  2. Meanwhile, in a small bowl, with fork, combine flour, mustard and lowfat milk till well blended. Stir mix and ham into potatoes; continue cooking till sauce is thickened, stirring constantly. Reduce heat to low; cover and simmer 5 min till potatoes are tender, stirring occasionally. Yield: 8 servings.
