Directions

  1. In large skillet, heat butter and oil till butter is melted. Add in potatoes, ham and onion. Cook over medium heat, stirring and turning mix over till crispy brown.
  2. While hash is cooking, make mustard cream sauce. In small saucepan, heat 1 Tbsp. butter. Stir in flour to make a roux. Add in lowfat milk and stir over low heat till sauce begins to thicken. Stir in mustard.
  3. Continue cooking till sauce is thick. Add in sliced Large eggs to sauce, but don't stir.
  4. When hash is finished cooking, place in serving bowl.
  5. Pour Large eggs with sauce over the middle of the hash.
  6. Serve at once. Nice with toast or possibly biscuits.
  7. Serves: 4
