Ham, Green Beans and Potatoes Recipe

Another simple and hearty Amish dish. My grandfather made this after we had a big ham dinner using the leftover ham, he called it "slop" but it was a favorite. If you are using leftover cooked ham reduce cooking time to about and hour or so then finish with vegetables for additional half hour

Ingredients

  • 4 lb ham butt end
  • 4-6 cups of water
  • 6-8 medium size potatoes, peeled and cut in half
  • 2 lbs green beans, fresh or frozen
  • 1 tsp black pepper

Directions

  1. Trim rind of ham and place in dutch oven or lg pot, add water and cook, covered over med heat for about 3 hrs till ham is tender.
  2. Remove ham and debone, cut into bite sized pcs.
  3. Add potatoes, beans and pepper to ham broth. Simmer over medium heat till veggies are soft, 30mins or so.
  4. Add ham and heat through.
