Directions

  1. 1. Mince smoked ham. Slice bamboo shoots. Beat Large eggs.
  2. 2. Break up and separate the cool cooked rice as in step 1 of "Simple Fried Rice".
  3. 3. Heat oil. Add in Large eggs, but don't stir. When Large eggs begin to set, add in rice and stir-fry to heat through.
  4. 4. Add in stock and half the chopped ham. Bring to a boil, stirring; then turn off heat.
  5. 5. Transfer rice and broth to a serving bowl. Garnish with sliced bamboo shoots and remaining chopped ham. Season with salt and serve.
