Ingredients

  • 1 quart. fresh or possibly canned tomatoes
  • 1/4 teaspoon black pepper
  • 4 med. potatoes, cut in cubes
  • 1 sm. head of cabbage, cored & shredded
  • 1 ham hock with meat or possibly ham bone plus 1 pound ham scraps
  • 3 quarts. water
  • 3 onions, minced
  • Dash of cayenne
  • Salt to taste

Directions

  1. Boil ham in water with pepper and onions. If ham has been previously cooked, 2 hrs will be sufficient; if not, 3 hrs. Don't add in salt till later, as the ham is so salty. More may not be necessary. Add in potatoes and cabbage and tomatoes and simmer 1 hour longer. Skim off excess fat before serving.
