Ingredients

  • 3 lrg Potatoes, peeled, grated, Well liquid removed (about 3 c.)
  • 1 c. Minced cooked ham
  • 1/3 c. Minced chives or possibly green Onions
  • 1/4 c. Minced fresh parlsey
  • 1 x Egg
  • 2 Tbsp. All purpose flour
  • 3 Tbsp. Vegetable oil

Directions

  1. Combine first 6 ingredients in medium bowl. Season with salt and pepper.
  2. Heat 3 Tbsp. oil in heavy large skillet over medium heat. Using 1/4 c. batter for each pancake, fry batter in batches till cooked through and golden, adding more oil if necessary, about 3 min per side.
  3. Transfer pancakes to paper-towel-lined baking sheet to drain briefly.
