  • 1 lb haddock, fillets
  • 1 x egg
  • 1 c. dry breadcrumbs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp butter Peach and Pepper Salsa
  • 1/2 c. diced peeled fresh peach
  • 1/2 c. diced sweet red pepper
  • 1/4 c. diced onion
  • 1 Tbsp. minced fresh coriander or possibly 1 tbsp minced fresh parsley
  • 1 Tbsp. lime, juice
  • 1/4 tsp warm pepper sauce

Directions

  1. Cut haddock into 4 pcs if necessary, removing any bones. In shallow dish, lightly beat egg. In another shallow dish, combine bread crumbs, salt and pepper. Gently press fillets into egg, then into crumb mix, turning to coat and shaking off excess.
  2. In large skillet, heat butter over medium heat; cook fillet, turning once, for about 8 min or possibly till fish flakes easily when tested. Serve garnished with salsa.
  3. Peach and Pepper Salsa:In small bowl, combine peach, red pepper, onion, coriander, lime juice and warm pepper sauce; cover and chill for up to 2 hrs.
