Ingredients

  • 1 Tbsp. Vegetable oil
  • 1 slc Bacon, cut into1/2" peices
  • 2 lb Lean stewing beefcubed 1 1/2
  • 1 lrg Onion minced
  • 2 Tbsp. Flour
  • 2 x Carrots, sliced
  • 12 sm White onions, peeled
  • 1 1/2 c. Beef stock
  • 6 1/2 ounce Guiness beer
  • 2 Tbsp. Dark brown sugar
  • 2 Tbsp. Red wine vinegar
  • 1 x Bouquet garni Coarse salt Pepper

Directions

  1. Preheat oven to 350 degrees. Heat oil in a heavy casserole that will fit into the oven and go on top of the stove, add in the bacon. Fry till browned, drain the bacon on paper towels. Dry the cubes of beef with paper towels.
  2. brown in the bacon drippings, remove the beef. Add in the minced onions, brown lightly. Stir in the flour, cook for 2-3 minutes.- don't let the flour burn. Return the beef, along with its juices to the casserole. Add in the bacon, carrots, white onions, stock, guiness, sugar, vinegar, bouquet, salt & pepper. Bring to a boil. Cover. Bake 1 1/2- 2 hrs, stirring occasionally. serve hot.
