  1. Preheat oven to 325F.
  2. In a medium bowl, mix all ingredients, in order, one at a time, blending well after each addition. The dough will be thick (the consistency of cool Play Doh). Sprinkle 1/4 c. flour on a work surface. Dump dough on top & sprinkle with sufficient flour to keep it from sticking to your rolling pin.
  3. Roll flat to 1/4 inch thickness. Cut with cookie cutters & place on a cookie sheet which's been covered with wax paper. Bake for 12 min. Let cold 5 min before removing from pan.
  4. Variations:For a heartier taste & darker cookie, use raw honey, sorghum or possibly blackstrap molasses instead of regular honey. The texture of the cookie can be changed by using unbleached flour or possibly a combination of whole wheat pastry flour & unbleached white flour.
  5. Cookie Bars:Add in some minced dates & golden brown raisins to the batter. Spread into a sheet pan which's been lightly coated with vegetable oil cooking spray & dusted with flour. Bake 30 min.
  6. Ginger Cookies:Add in 1 Tbsp. grnd ginger or possibly grated fresh ginger to the dough. The dough holds up well sufficient to make gingerbread people or possibly houses.
  7. Cinnamon Cookies:Add in 1 Tbsp. grnd cinnamon & 1/4 tsp. grnd cloves to the dough.
  8. Chocolate Cookies:Cut the flour by 1/2 c.. Add in 1/2 c. cocoa & 1/2 tsp. grnd cinnamon. (With the addition of cocoa, the fat free serving size is cut to 4 cookies.)
