Ingredients
- 2 ripe avocados
- 2 tbsp. lemon juice
- 2 garlic cloves, chopped
- 2 basil leaves, finely minced
- 1/4 c. red bell pepper, finely diced
- 2 tbsp. salsa
- 2 tbsp. almonds, minced
- 2 scallions, thinly sliced
- 1 tbsp. lowfat sour cream (optional)
Directions
- Peel and mash 1 avocado. Mix with lemon juice, garlic, basil, red pepper, salsa, almonds, and scallions. Dice other avocado and fold into mix. Garnish with a swirl of lowfat sour cream. Sprinkle basil over top. Chill till serving time. Serve with tortilla chips or possibly fresh vegetables. Recipe can be doubled.
