Ingredients

  • 2 lbs. grnd turkey or possibly chicken (even hamburger)
  • 2 lg. onions, 1 diced, 1 sliced
  • 2 lbs. washed carrots, unpeeled to keep vitamins intact
  • 6 celery stalks with leaves
  • 2 lg. cans tomatoes
  • 1 lg. can tomato sauce
  • 6 lg. potatoes, washed, but not peeled, cubed
  • 1 quart. water
  • 1 quart. beef stock (can be instant or possibly reduce your own)
  • Salt and pepper to taste

Directions

  1. Saute/fry minced onion, grnd meat and celery. Strain off any extra fat. Return to stock pot. Add in sliced onions, sliced carrots and diced potato. Add in tomatoes and tomato sauce. Then add in water and stock. Cook all ingredients over medium low heat for about 1 hour. Season to taste with salt and pepper.
  2. You may add in any leftover vegetables in the refrigerator. Healthy, filling and good way to use leftover vegetables.
