  • 1 1/2 lbs. grnd beef
  • 1/2 med. onion, diced
  • 1 can diced green chilies
  • 1 sm. can sliced olives
  • 1 (8 ounce.) can tomato sauce
  • 1 can Mexican flavored tomatoes
  • 2 1/2 c. instant rice
  • 1/2 c. grated Cheddar cheese

Directions

  1. Brown onion and grnd beef in skillet; drain. Add in liquid removed olives and chilies. Cook together 5 min. Add in tomatoes and tomato sauce, rice and 2 c. water. Cook on low heat 10-15 min. Put in casserole dish and sprinkle cheese on top. Bake till cheese melts.
