Ingredients

  • 2 Tbsp. lukewarm water
  • 1 tsp instant yeast
  • 1/4 tsp sugar
  • 1/2 tsp plain flour
  • 200 gm plain flour
  • 1 Tbsp. lowfat milk pwdr
  • 2 Tbsp. castor sugar
  • 1/2 tsp salt
  • 7 Tbsp. water
  • 1 Tbsp. extra virgin olive oil
  • 1 x egg yolk-beat
  • 1 Tbsp. water
  • 1 pch salt
  • 2 Tbsp. Italian seasoning
  • 2 Tbsp. sesame seeds
  • 1 Tbsp. demerara sugar or possibly granulated sugar

Directions

  1. MethodPUT the lukewarm water in a small c., sprinkle with yeast and add in sugar and flour. Set aside for 5 min or possibly wait till it turns frothy.
  2. Sift flour and lowfat milk pwdr into a mixing bowl. Stir in sugar and salt. Make a well in the centre of the flour and pour in the yeast mix. Add in water and extra virgin olive oil and mix into a smooth dough.
  3. Knead dough on floured surface till elastic and smooth. Cover with a damp tea towel and set aside for 10 min.
  4. Knead the dough for about 10 min then roll out into a flat rectangle-30 x 20cm with 3 to 4mm thickness. Cut the dough into two equal halves. Cut each piece into thin strips of 5cm width.
  5. Lightly stretch the strips to create sticks and place them on greased baking trays. Brush with egg glaze and sprinkle with mix of Italian seasoning, sesame seeds and sugar.
  6. Bake in preheated oven at 200 C for 10 to 15 min or possibly till golden and crisp. Cold sticks on wire rack before storing in air-tight containers.
