Grilled Vegetables with a Meyer Lemon and Capers dressing

Directions

  1. Caper Dressing
  2. Mix together the Capers, Garlic, Salt, Honey, and Parsley.
  3. Once it is fulling incorporated, slowly whisk in the Olive Oil.
  4. Add the pepper to taste.
  5. Mixed Vegetables
  6. Sliced all the vegetables about 1/2 inch thick.
  7. Grill them until it is tender
  8. Once it is grilled, dice to large cubs.
  9. Add the dressing and toss.
