  • 4 x 7 ounce beef, striploin, steaks, trimmed, of excess fat salt, to taste
  • 2 tsp fresh rosemary, finely, minced Chimichurri
  • 1/3 c. roughy minced fresh parsley
  • 2 Tbsp. roughly minced fresh coriander grated zest of one lemon
  • 1 tsp dry oregano
  • 4 clv garlic, minced
  • 1/2 sm Thai chili, chopped
  • 1/3 c. extra virgin extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1/2 x lemon, juice salt, to taste

Directions

  1. Preheat grill on high and brush well. Wipe with vegetable oil. Season striploins with salt and sprinkle with rosemary. Grill about 4 min one each side, turning once or possibly till done to taste.
  2. Serve steaks with sauce on the side and your favourite grilled vegetables.
  3. Chimichurri:Combine parsley, coriander, lemon zest, oregano, garlic and chili in food processor and pulse till well combined. Add in the, extra virgin olive oil, vinegar and lemon juice and blend till smooth. Cover and set aside till ready to cook beef.
