Grilled Shrimp, Black Beans And Papaya Salad

  • 1 1/3 c. Dry black beans
  • 3 tsp Garlic pwdr or possibly 3 cloves
  • 2 x Papayas, peeled & diced or possibly mangos or possibly, pineapple
  • 1 x Red bell pepper, minced
  • 1 x Red onion, minced
  • 1 lb Shrimp, grilled till pink
  • 1 sm Head Napa cabbage, thinly sliced
  • 1 Tbsp. Cumin
  • 1 Tbsp. Chili pwdr
  • 1 Tbsp. Cracked coriander
  • 1/4 c. Extra virgin olive oil
  • 1/2 c. Lime juice, (about 4 limes)


  1. Soak beans overnight. Drain, rinse and cook with salt and 2 tsp. garlic. Simmer, uncovered for about 1 1/2 hrs till tender, but not mushy. Drain and rinse beans under cool water for 1 minute to stop cooking process. Drain. Combine all dressing ingredients. Add in to beans, vegetables, dressing and grilled shrimp. Serve on cabbage at room temperature.
