Grilled Sea Bass With Mango And Red Onion Salsa

Ingredients

  • 1 x mango, minced small
  • 1 x red pepper, minced small
  • 1 x red onion, minced small
  • 1/4 c. cilantro, minced (62ml)
  • 1 tsp grnd garlic (5ml)
  • 1/4 c. pineapple juice (62ml)
  • 6 Tbsp. fresh lime juice (90ml)
  • 1 Tbsp. fresh chilli jalapeno pepper, minced into cubes (15ml)
  • 1 x salt and pepper, to taste
  • 1 x red bell pepper, minced Spice Rub
  • 4 1/4 lb sea bass fillets (approx 2 lbs)
  • 1 Tbsp. dry basil (15ml)
  • 1 Tbsp. dry thyme (15ml)
  • 1 Tbsp. salt (15ml)
  • 1 Tbsp. fresh cracked black pepper (15ml)

Directions

  1. Mix all salsa ingredients together and set aside. Chill till ready to use.
  2. Spice Rub:Mix all spice rub ingredients together in a small bowl. Brush the fish fillets with extra virgin olive oil and rub1 Tbsp. of the spice rub into each.
  3. Preheat grill at 350 Fahrenheit.
  4. Grill the fish on medium heat for 4 min per side. Serve with salsa.
