Grilled Salisbury Steak

Ingredients

  • 2 lbs. ground chuck
  • 1 medium onion
  • 1/2 green pepper
  • 1 stalk celery
  • 1 clove of garlic
  • 2 TBSP parsley flakes
  • 1/2 tsp. dry mustard
  • 1/2 tsp. dried marjoram, crushed
  • 1/2 tsp. dried thyme, crushed
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • Sauce ingredients:
  • 3 TBSP butter
  • 4 oz. sliced fresh mushrooms
  • 1/2 tsp. flour
  • 1/3 cup chili sauce
  • 1/4 cup dry red wine
  • 1 tsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1 dash Frank's red hot sauce

Directions

  1. To make the patties:
  2. Place the ground beef in a large bowl; set aside.
  3. In a food processor, combine onion, green pepper, celery and garlic.
  4. Chop until minced.
  5. Add the vegetables to the ground beef.
  6. Add the 7 spices the the ground beef mixture and mix thoroughly.
  7. Shape the mixture into 8 patties about 3/4 inch thick.
  8. Grill the patties directly over medium coals for 12-14 minutes, turning once.
  9. To make the sauce:
  10. In a large saucepan over medium high heat, melt the butter.
  11. Add the mushrooms and cook for 4-5 minutes until tender, stirring occasionally.
  12. Sprinkle with the flour and stir.
  13. Add the chili sauce, red wine, lemon juice, Worcestershire sauce and hot sauce.
  14. Cook and stir until mixture is bubbly. Cook for 1 minute more.
  15. Serve the sauce over the meat patties.
