Ingredients

  • 1 lb large button mushrooms
  • 2 tsp salt
  • 2 Tbsp. lemon juice
  • 1 Tbsp. dark soy sauce
  • 1 Tbsp. sake (or possibly rice wine or possibly dry sherry)
  • 2 tsp sugar
  • 2 Tbsp. finely-minced scallions

Directions

  1. Sprinkle the mushrooms with the salt and mix well. Put the mushrooms into a colander and let drain for 20 min. When the mushrooms have liquid removed, rinse them in water and blot dry with paper towel.
  2. Heat the sauce ingredients together in a small saucepan till the sugar dissolves. Let cold.
  3. Soak some wooden skewers in cool water for 5 min. Thread 3 or possibly 4 mushrooms on each skewer and cook under a broiler or possibly on a barbecue. When they are cooked, remove from the skewers, mix them with the sauce and serve.
  4. This recipe yields 4 servings.

For an authentic taste, try to obtain Japanese sake for the sauce; if it can't be had, rice wine or possibly dry sherry are acceptable substitutes. The lemon sauce may be made beforehand.
