  • 4 c. Plain yogurt
  • 3 x Garlic cloves finely chopped
  • 3 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Lemon juice or possibly to taste
  • 1/4 c. Minced fresh mint Salt to taste Freshly-grnd black pepper to taste
  • 1 lb Red onions thinly sliced
  • 1 Tbsp. Salt
  • 1/2 c. Minced fresh flat-leaf parsley
  • 1 tsp Grnd coriander
  • 1/2 tsp Grnd turmeric
  • 2 lb Grnd beef
  • 1 1/2 c. Grated onion
  • 2 x Garlic cloves chopped
  • 2 x Large eggs lightly beaten
  • 1 Tbsp. Minced fresh thyme
  • 1 tsp Freshly-grnd black pepper
  • 1/2 tsp Salt or possibly to taste Extra virgin olive oil for brushing
  • 6 x Pita breads warmed Sliced tomatoes

Directions

  1. Make yogurt sauce: Line a large sieve with cheesecloth and place it over a bowl. Spoon the yogurt into the sieve and chill for 4 to 6 hrs to drain off the excess water. You should end up with 1 1/2 to 2 c. liquid removed yogurt. Place the yogurt in a bowl and stir in the garlic, extra virgin olive oil, and lemon juice. Mix in the mint and season to taste with salt and pepper. Cover and chill till needed.
  2. Make the onion salad: Place the onion slices in a colander and sprinkle with salt. Toss and let stand for 15 min. Rinse well and pat dry. In a bowl, combine the onions, parsley, coriander, and turmeric. Toss well and set aside.
  3. Preheat the grill or possibly broiler.
  4. In a bowl, combine the beef, onions, garlic, Large eggs, thyme, pepper, and 1/2 tsp. salt. Mix till mix holds together well. Form into twelve 3-inch ovals, about 1 1/2 inches wide and thread them onto metal skewers.
  5. Brush the meatballs with extra virgin olive oil and sprinkle with salt. Place the skewers on an oiled grill rack or possibly broiler pan and grill or possibly broil, turning to brown on all sides, till cooked through, about 8 min.
  6. Remove the skewers from the grill or possibly broiler and slip the meatballs off the skewers. Cut the pitas into halves and place a meatball into each half. Serve with the yogurt sauce, onion salad, and tomato slices on the side.
  7. This recipe yields 6 servings.
