Grilled Mahi Mahi Sandwich With Salsa Mayo And Jack Cheese Recipe

  • 2 x skinless mahi-mahi fillets - (abt 5 ounce ea)
  • 1 Tbsp. Southwest Dry Chili Rub (see recipe)
  • 1/4 c. Snappy Salsa (see recipe) (or possibly use purchased high-quality chunky tomato salsa, well liquid removed)
  • 1/4 c. mayonnaise Vegetable oil for brushing grill
  • 4 slc pepper Jack or possibly Monterey Jack cheese (abt 1 ounce)
  • 2 x French rolls or possibly 4" French bread pcs split crosswise
  • 1/2 x avocado sliced
  • 4 sprg cilantro sprigs - (to 5)
  • 2 lrg crisp lettuce leaves
  • 1 x lime cut in wedges

Directions

  1. Seafood Alternatives: snapper, swordfish Lay the mahi-mahi fillets out in a glass baking dish and sprinkle both sides liberally with the chili rub. Cover and set aside. In a small bowl, mix together the salsa and mayonnaise. Set aside.
  2. Meanwhile, heat the barbecue grill till the coals glow red with white ash around the edge. When the coals are warm, carefully brush the grill surface with a little vegetable oil, then lay the mahi-mahi on the grill. Grill till the first side is well marked, about 2 min, then turn the fish over. After about 1 minute on the second side, top each fillet with slices of cheese and continue cooking till the cheese is melted and the fish is just cooked through and still moist, about 1 to 2 min longer.
  3. While the fish is cooking, lightly toast the bread on the edges of the grill or possibly hot it in a low oven.
  4. Spread the bread with the salsa mayonnaise and set a piece of the fish on top. Top with avocado slices, cilantro sprigs and lettuce. Serve with lime wedges alongside for squeezing. Pass extra Snappy Salsa on the side if you like.
