Grilled Lemon-Basil Chicken

Ingredients

  • 1 c. fresh basil, minced
  • 1 c. canola oil
  • 1/2 c. lemon juice
  • 1/4 c. white wine vinegar
  • 2 tsp. grated lemon peel
  • 3-4 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 8 boneless, skinless chicken breasts

Directions

  1. In a small bowl, combine the first eight ingredients. Pour 1 t c.
  2. into a large resealable plastic bag; add chicken. Seal bad and turn
  3. to coat; refrigerate for 4 hours or overnight, turning
  4. occasionally. Cover and refrigerate remaining marinade for
  5. basting.
  6. Drain and discard marinade. Grill chicken, covered, over medium
  7. heat for 6-8 minu.tes on ea. ch side or a meat thermometer reads
  8. 170°, basting occasionally with reserved marinade.
